Low Sugar Applesauce Oatmeal Cookies

These healthy, chewy cookies are sweetened with applesauce and optional natural sweeteners, perfect for a guilt-free treat.

Ingredients
  

Dry ingredients
  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 0.5 tsp fine sea salt
  • 1.5 tsp ground cinnamon
Wet ingredients
  • 1 cup unsweetened applesauce
  • 1 large egg (or flax egg) 1 Tbsp ground flax + 3 Tbsp water, mixed and rested 5 min
  • 1 tsp pure vanilla extract
  • 1-2 Tbsp honey or maple syrup optional, for extra sweetness
Optional mix-ins
  • to taste Chopped walnuts or pecans optional
  • to taste Flax or chia seeds optional
  • to taste Dried cranberries or raisins optional
  • to taste Dark chocolate chunks optional

Method
 

  1. Preheat oven to 175°C (350°F). Line baking sheets with parchment.
  2. Mix dry ingredients: oats, flour, baking soda, salt, cinnamon.
  3. Whisk wet ingredients: applesauce, egg or flax egg, vanilla, honey/maple syrup.
  4. Combine wet and dry; fold in optional mix-ins. Scoop onto baking sheets and bake 12-14 min.
  5. Cool cookies 5 min on sheet, then transfer to wire rack. Store in airtight container.
