Method
- Preheat oven to 175°C (350°F). Line baking sheets with parchment.
- Mix dry ingredients: oats, flour, baking soda, salt, cinnamon.
- Whisk wet ingredients: applesauce, egg or flax egg, vanilla, honey/maple syrup.
- Combine wet and dry; fold in optional mix-ins. Scoop onto baking sheets and bake 12-14 min.
- Cool cookies 5 min on sheet, then transfer to wire rack. Store in airtight container.

For added flavor, include your favorite mix-ins.
