Brown Butter Sourdough Banana Bread

Ingredients
  

Butter
  • 1/2 cup salted butter
Sugar
  • 3/4 cup brown sugar
Eggs
  • 2 eggs, at room temperature
Vanilla
  • 1 tsp vanilla extract
Bananas
  • 1 1/4 cups mashed ripe bananas (2-3 large bananas)
Sourdough discard
  • 1/2 cup sourdough discard, at room temperature [substitution: 1/2 cup greek yogurt]
Greek yogurt
  • 1/2 cup greek yogurt, at room temperature
Flour
  • 2 1/2 cups all-purpose flour
Baking soda
  • 1 tsp baking soda
Baking powder
  • 1/2 tsp baking powder
Cinnamon
  • 1 tsp cinnamon
Salt
  • 1/2 tsp salt
Chocolate chips
  • 1 cup chocolate chips or chunks of choice
Sea salt
  • to taste flaky sea salt, for serving

Method
 

  1. Preheat oven to 350°F. Grease a 9x5” loaf pan and line with parchment.
  2. Melt butter in a saucepan over medium-high heat until browned (~5 min). Cool slightly, then pour into a bowl.
  3. Whisk together dry ingredients. Add to wet ingredients and fold until just combined.
  4. Fold in chocolate chips. Pour batter into pan, top with more chips if desired, and score lengthwise.
  5. Bake for 60-65 minutes until golden and a toothpick comes out clean. Cool slightly before slicing and serving with sea salt.

Notes

For extra flavor, sprinkle flaky sea salt on top before serving.
