Ingredients
  

Dry ingredients
  • 2 cups all-purpose flour 300g
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
Wet ingredients
  • 3 ripe bananas bananas mashed
  • ½ stick unsalted butter at room temperature (¼ cup/2 oz/56g)
  • 4 oz cream cheese at room temperature (113g)
  • ¾ cup sugar 165g
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup buttermilk 180ml

Method
 

  1. Preheat oven to 350°F (180°C) and prepare loaf pan.
  2. Mix dry ingredients in a bowl and mash bananas separately.
  3. Cream butter, cream cheese, and sugar until fluffy. Add eggs and vanilla.
  4. Combine wet and dry ingredients, then fold in bananas and buttermilk.
  5. Pour batter into pan and bake for 50-60 minutes. Cool before serving.

Notes

For a creamier texture, fold in some chopped nuts or chocolate chips.
