  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, no salt added
  • 1 cup bell pepper, chopped
  • 1 cup zucchini, diced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for garnish Fresh parsley

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion and garlic until softened, about 3-4 minutes.
  3. Add ground beef and cook until browned, breaking it apart.
  4. Stir in tomatoes, bell pepper, zucchini, Italian seasoning, salt, and pepper. Simmer for 10-15 minutes.
  5. Adjust seasoning if needed, then serve garnished with parsley.
