  • 1 cup cooked quinoa
  • 0.5 cup black beans, rinsed
  • 0.5 cup corn, drained
  • 0.5 cup diced bell peppers
  • 0.25 cup chopped cilantro
  • 0.25 cup lime juice
  • 1 teaspoon cumin
  • to taste Salt and pepper

Method
 

  1. Combine quinoa, black beans, corn, bell peppers, and cilantro in a bowl.
  2. Whisk lime juice, cumin, salt, and pepper in a small bowl.
  3. Pour dressing over the mixture and toss to combine.
  4. Serve immediately or chill for 30 minutes before serving.

Notes

For extra flavor, add a pinch of chili powder or hot sauce.
