Method
- Separate egg whites and yolks.
- Whisk yolks and sugar until light and frothy.
- Add mascarpone to yolk mixture and whisk until combined.
- Whisk egg whites until stiff peaks form.
- Gently fold egg whites into yolk mixture.
- Dip ladyfingers in coffee.
- Layer ladyfingers and filling in a dish.
- Refrigerate overnight or for at least 6 hours.
- Dust with cocoa powder before serving.
Notes
For a stronger coffee flavor, add a splash of coffee liqueur to the coffee before dipping the ladyfingers.
