Ingredients
  

Pumpkin and Wet Ingredients
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
Cinnamon Sugar for Swirl
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and grease mini loaf pan.
  2. Mix pumpkin, oil, sugars, and eggs until smooth.
  3. Whisk dry ingredients together.
  4. Combine dry with wet ingredients; pour half into pan.
  5. Mix cinnamon and sugar for swirl; add half over batter.
  6. Add remaining batter, swirl gently, then bake 25-30 mins.

Use fresh spices for best flavor and avoid overmixing to keep bread tender.
