  • 1 egg lightly beaten egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or whole wheat pastry flour)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 8 ounces cream cheese (softened at room temperature for at least an hour—it should be soft when you poke it with your finger)
  • 2 tablespoons maple syrup
  • ½ teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a cake pan.
  2. Mix sweet potato puree, vegetable oil, maple syrup, egg, and vanilla until smooth.
  3. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add dry ingredients to wet mixture, mixing until just combined.
  5. Pour batter into prepared pan and bake for 30 minutes or until a toothpick inserted comes out clean.
  6. Mix softened cream cheese, maple syrup, and vanilla to make frosting. Spread over cooled cake.
