Method
- Brown chicken in avocado oil over medium heat, about 5 minutes per side. Set aside.
- Cook onions and garlic until softened, 4-5 minutes. Add salt, pepper, and turmeric; cook 1-2 minutes. Add tomatoes; cook 2-3 minutes.
- Add tomatoes, coconut sugar, lime juice, chicken stock, and rhubarb.
- Return chicken to pan, simmer, then cook on medium-low heat uncovered for about 1 hour, stirring occasionally. Serve with parsley.
Notes
For a richer flavor, use bone-in chicken thighs instead of drumsticks. Adjust the amount of coconut sugar to your liking, depending on the tartness of the rhubarb.
