Ingredients
  

Shortcakes
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup granulated sugar
  • 0.5 cup cold unsalted butter cut into cubes
  • 0.75 cup milk
  • 1 teaspoon vanilla extract
Strawberry Topping
  • 1 pound fresh strawberries hulled and sliced
  • 0.25 cup granulated sugar for strawberries
Whipped Cream
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar for whipped cream

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Whisk together flour, baking powder, salt, and 1/2 cup sugar.
  3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Stir in milk and vanilla extract until just combined. Do not overmix.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes, or until golden brown.
  7. Combine sliced strawberries and 1/4 cup sugar. Let sit for at least 15 minutes to macerate.
  8. Beat heavy cream and powdered sugar until stiff peaks form.
  9. Split warm shortcakes. Spoon strawberries and whipped cream over the bottom half. Top with the other half, more strawberries, and whipped cream. Serve immediately.

Notes

For best results, use very cold butter and do not overmix the dough.
