  • 2 cups mashed sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup milk
  • 2 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • pinch cream of tartar

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 2-quart souffle dish.
  2. Mix sweet potatoes, sugar, butter, milk, egg yolks, vanilla, cinnamon, nutmeg, and salt until smooth.
  3. Beat egg whites with cream of tartar until stiff peaks form.
  4. Gently fold egg whites into sweet potato mixture. Pour into dish and smooth top.
  5. Bake for 30-35 minutes until puffed and lightly browned. Serve immediately.

Notes

Ensure egg whites are beaten to stiff peaks for a fluffy souffle.
