Method
- Preheat oven to 350°F (175°C). Grease a 2-quart souffle dish.
- Mix sweet potatoes, sugar, butter, milk, egg yolks, vanilla, cinnamon, nutmeg, and salt until smooth.
- Beat egg whites with cream of tartar until stiff peaks form.
- Gently fold egg whites into sweet potato mixture. Pour into dish and smooth top.
- Bake for 30-35 minutes until puffed and lightly browned. Serve immediately.
