  • 8 cups rhubarb, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 cup water
  • 1 onion, chopped
  • 1.33 cup white vinegar
  • 2.67 cups white sugar
  • 2 teaspoons cloves
  • 0.25 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 2 teaspoons salt
  • 0.5 teaspoon pepper
  • 6 drops liquid smoke

Method
 

  1. Combine rhubarb, garlic, celery, onion, and water. Cook until soft.
  2. Add remaining ingredients and bring to a low simmer.
  3. Cook on low heat until mixture has reduced to a consistency similar to apple sauce.
  4. Place sauce in sanitized jars and process with water bath.
  5. Serve with wild game, lamb or other meats. Can be used in grape juice reduction sauces and baked beans as well.
  6. Enjoy!

Notes

For a smoother sauce, blend the mixture after cooking. Adjust sugar to taste.
