  • 4 cups rhubarb fresh, chopped into ½" pieces
  • 1 cup granulated sugar
  • 0.5 cup water or fruit juice
  • 1 tsp vanilla extract optional but recommended
  • 1 box yellow cake mix (standard size, ~15.25 oz)
  • 0.75 cup unsalted butter cold, sliced thin

Method
 

  1. Preheat oven to 350°F and grease a 9x13-inch baking dish
  2. Chop rhubarb and spread evenly in the dish
  3. Sprinkle sugar, pour water and vanilla over rhubarb
  4. Evenly dump cake mix on top—do not stir
  5. Arrange sliced cold butter over dry cake mix
  6. Bake until golden and bubbly; let cool before serving

Notes

For a crispier topping, broil for the last few minutes, watching carefully to prevent burning.
