Ingredients
  

Rhubarb Filling
  • 4 cups chopped rhubarb ½-inch pieces, fresh or frozen
  • 0.75 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon vanilla extract optional
Oat Topping
  • 1 cup rolled oats
  • 0.75 cup packed brown sugar
  • 0.5 cup all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 1 Pinch salt
  • 0.5 cup unsalted butter cold and cut into small cubes

Method
 

  1. Preheat the oven to 375°F.
  2. Combine rhubarb, granulated sugar, flour, and vanilla extract (if using).
  3. Stir until evenly coated.
  4. Pour into a greased 8x8-inch baking dish and spread evenly.
  5. In a separate bowl, combine oats, brown sugar, flour, cinnamon, and salt.
  6. Add the cold butter cubes to the dry mixture.
  7. Work the butter in until the mixture forms coarse crumbs.
  8. Sprinkle the topping evenly over the rhubarb mixture.
  9. Bake for 35 to 40 minutes, or until golden brown and bubbling.
  10. Let it cool for 15 to 20 minutes before serving.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat!
