Method
- Preheat oven to 375°F (190°C). Grease and flour an 8x8 inch baking pan.
- In a medium bowl, whisk together flour, oats, brown sugar, baking soda, and salt.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the prepared pan. Bake for 10 minutes.
- Toss rhubarb, raspberries, sugar, and cornstarch in a separate bowl.
- Remove the crust and spread raspberry jam evenly over it.
- Top with the rhubarb and raspberry mixture.
- Sprinkle the remaining crumb mixture over the fruit filling.
- Bake for 30-35 minutes, or until golden brown and bubbly.
- Let cool completely before cutting into bars.
Notes
For a richer flavor, use salted butter and omit the added salt. You can also add a sprinkle of cinnamon to the crumble topping.
