Method
- Prepare an ice bath and set aside.
- Heat cream, milk, and vanilla until steaming (~8 min). Whisk egg yolks and sugar. Stream hot mixture into eggs, then combine back into saucepan and cook until 180°F.
- Strain the mixture into a bowl over ice, chill for 4-8 hours until 40-42°F.
- Crush Oreo cookies into pieces. Process ice cream in a machine for 20-25 min, adding ¾ cup crushed cookies in last 3 min.
- Layer ice cream and remaining cookie pieces in a container. Freeze for a few hours to harden.
Notes
For best results, use high-quality Oreos and chill the base thoroughly.
