Ingredients
  

Pumpkin
  • 1 can (15 oz) Libby's Pure Pumpkin
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour two loaf pans.
  2. Mix pumpkin, oil, and sugar. Add eggs one at a time.
  3. Combine dry ingredients; add to pumpkin mixture. Fold in nuts if desired.
  4. Divide batter into pans and bake for 60-70 minutes. Cool before serving.
