Ingredients
  

Cranberries
  • 1 cup fresh cranberries
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 0.5 cup chopped walnuts or pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x9 inch pan.
  2. Combine cranberries with 1/4 cup sugar; set aside.
  3. Cream butter with remaining sugar; add eggs, vanilla, and almond extracts.
  4. Mix in flour, baking powder, and salt; fold in cranberries and nuts.
  5. Pour batter into pan, bake 25-30 mins, cool, then dust with powdered sugar if desired.

Notes

For extra flavor, add a splash of orange juice to the cranberries.
