Coconut Milk
  • 1 can full fat coconut milk
Matcha
  • 1 to 2 teaspoons matcha
Sweeteners
  • 1/2 cup sugar
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla
  • Squeeze lemon fresh lemon juice
  • 1 tablespoon vodka
  • Pinch salt

Method
 

  1. Freeze the ice cream bowl for at least 12 hours and gather ingredients.
  2. Whisk together matcha, sugar, maple syrup, vanilla, lemon juice, salt, and vodka until smooth.
  3. Pour mixture into the chilled ice cream maker and churn for 20-30 minutes until creamy.
  4. Transfer to a container and freeze for 1-2 hours until firm, stirring once if desired.
  5. Serve scoops of the ice cream, optionally topping with fruit or syrup.

Notes

For a lighter version, reduce sugar or use a sugar substitute.
