Method
- Heat oven to 160°C / 325°F.
- Combine softened butter and sugar, mixing well but don't cream.
- Mix in egg yolk, vanilla, and flour to form a dough, handling as little as possible.
- Roll out dough to typical sugar cookie thickness and cut into circles or shapes.
- Transfer to a greased baking sheet, prick with a fork, and bake for 15 minutes until pale.
- Cool on a rack and optionally decorate with sanding or icing sugar.
