Ingredients
  

Dough
  • 112 g unsalted butter
  • 56 g granulated sugar
  • 1 egg yolk egg yolk
  • 170 g all purpose flour
  • 1 pinch salt
  • 1 tsp vanilla extract
Decorative
  • 56 g sanding sugar
  • 56 g powdered / icing sugar

Method
 

  1. Heat oven to 160°C / 325°F.
  2. Combine softened butter and sugar, mixing well but don't cream.
  3. Mix in egg yolk, vanilla, and flour to form a dough, handling as little as possible.
  4. Roll out dough to typical sugar cookie thickness and cut into circles or shapes.
  5. Transfer to a greased baking sheet, prick with a fork, and bake for 15 minutes until pale.
  6. Cool on a rack and optionally decorate with sanding or icing sugar.
