Ingredients
  

Dry ingredients
  • 225 g all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
Wet ingredients
  • 3 large eggs eggs (room temperature)
  • 225 g granulated sugar
  • 85 g unsalted butter
  • 190 g milk (dairy or non-dairy)
  • 2 tablespoons oil
  • 1.5 teaspoons vanilla extract
Filling and topping
  • 300 g whipping cream or heavy cream (cold)
  • 30 g powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 teaspoons cocoa powder for chocolate layer
  • 4 tablespoons strawberry jam store-bought or homemade
  • 2-3 fresh strawberries halved for decoration
  • 1 piece birthday candle with white and red stripes if possible
  • 20 g dark chocolate roughly chopped

Method
 

  1. Preheat oven to 350°F (175°C). Mix dry ingredients and wet ingredients separately, then combine and pour into prepared pans. Bake for 20 minutes.
  2. Allow cakes to cool completely. Whip the cream with powdered sugar and vanilla until stiff peaks form.
  3. Spread jam on one cake layer, add whipped cream, and top with the second layer. Decorate with strawberries and chocolate.
