Ingredients
  

Protein
  • 2 pieces boneless, skinless chicken breasts
Vegetables
  • 2 medium zucchinis sliced
  • 1 cup cherry tomatoes halved
Cheese
  • 1 cup shredded mozzarella cheese
Oils & Seasonings
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
Salt and pepper

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Arrange zucchini and cherry tomatoes in a baking dish, drizzle with olive oil, and season with garlic powder, Italian seasoning, salt, and pepper.
  3. Place chicken breasts on top, season with salt and pepper, cover with foil, and bake for 25 minutes.
  4. Remove foil, sprinkle mozzarella on top, and bake uncovered for 10-15 minutes until bubbly.
  5. Let cool briefly before serving.

Notes

For extra flavor, add fresh herbs like basil or parsley before serving.
