Ingredients
  

Dry ingredients
  • 1 cup white whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1/8 teaspoon salt
Wet ingredients
  • 1 medium ripe banana about 3 ounces
  • 1/3 cup unsweetened applesauce
  • ¼ cup whole milk
  • ¼ cup pure maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
Frosting
  • 1 cup heavy whipping cream
Optional coloring
  • 1 cup frozen blueberries for natural purple coloring
  • ¼ cup water

Method
 

  1. Preheat oven to 350°F (175°C). Prepare cake pans.
  2. Mix dry ingredients in a bowl. Blend banana, applesauce, milk, and syrup; add egg and vanilla.
  3. Combine wet and dry; fill pans and bake for 20-23 minutes. Cool completely.
  4. Whip heavy cream until soft peaks form. Prepare blueberry sauce if coloring is desired, then fold into whipped cream.
  5. Frost the cake, assemble layers, and decorate as desired.

Notes

For best results, use ripe bananas and fresh ingredients.
