Ingredients

  • 1.5 cups fine blanched almond flour not packed
  • 0.5 cup ripe mashed banana
  • 2 large eggs
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 0.125 teaspoon salt
Toppings and optional fillings
  • coconut whipped topping or plain full-fat yogurt or frosting of choice for icing
  • fresh berries or sprinkles for decoration

Method
 

  1. Preheat oven to 350°F (175°C) and spray three 4-inch mini springform pans with cooking spray.
  2. Whisk eggs in a bowl, add mashed banana and vanilla, and mix well.
  3. Stir in almond flour, cinnamon, baking powder, and salt until just combined.
  4. Divide batter evenly into pans and bake for 20 minutes until golden and a toothpick comes out clean.
  5. Let cakes cool for 10-20 minutes, then remove from pans and cool completely before stacking and decorating.

Notes

Use naturally-colored sprinkles or fresh berries for a colorful, baby-friendly decoration.
