Ingredients
  

Dry Ingredients
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
Wet Ingredients
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk (dairy or non-dairy)
Main Ingredient
  • 1 cup chopped rhubarb

Method
 

  1. Preheat oven to 375°F (190°C). Line muffin tin.
  2. Whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. Combine applesauce, honey (or maple syrup), egg, vanilla extract, and milk. Whisk well.
  4. Pour wet into dry ingredients and stir until just combined.
  5. Gently fold in the chopped rhubarb.
  6. Fill each muffin cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Cool in tin, then transfer to a wire rack to cool completely.

Notes

For extra flavor, add a streusel topping before baking.
