Ingredients
  

dry ingredients
  • 1 cup instant oats
  • ¾ cup whole wheat flour or gluten-free flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp ground cinnamon
  • tsp salt
wet ingredients
  • 2 tbsp coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • ½ cup pure maple syrup (room temperature)
  • ¾ cup freshly grated carrots about 1 smallish medium, peeled first

Method
 

  1. Mix dry ingredients in a bowl. Whisk wet ingredients in another, then combine. Fold in carrots and chill for 30 minutes.
  2. Preheat oven to 325°F (160°C) and line a baking sheet.
  3. Drop dough onto sheet, flatten slightly, and bake for 12-15 minutes. Cool before serving.

Notes

Chill the dough for better texture and flavor.
