  • 1 cup mashed ripe bananas about 2 medium
  • 0.5 cup rolled oats not instant
  • 0.25 cup almond flour
  • 0.25 cup chopped nuts walnuts, pecans, or almonds
  • 0.25 cup raisins or dried cranberries optional
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon cinnamon
  • 1 pinch salt

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, mash the bananas well.
  3. Add the oats, almond flour, nuts, raisins (if using), vanilla extract, cinnamon, and salt to the mashed bananas. Mix until well combined.
  4. Drop by rounded tablespoons onto the prepared baking sheet.
  5. Bake for 12-15 minutes, or until lightly golden brown around the edges.
  6. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a sweeter cookie, add a tablespoon of honey or maple syrup.
