Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, mash the bananas well.
- Add the oats, almond flour, nuts, raisins (if using), vanilla extract, cinnamon, and salt to the mashed bananas. Mix until well combined.
- Drop by rounded tablespoons onto the prepared baking sheet.
- Bake for 12-15 minutes, or until lightly golden brown around the edges.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a sweeter cookie, add a tablespoon of honey or maple syrup.
