Healthy Banana Bread

Ingredients
  

Wet ingredients
  • 4 pieces very ripe bananas
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup (or honey)
  • 1 tsp vanilla extract
  • 2 eggs beaten eggs
Dry ingredients
  • 2.5 cups Oat flour* (see notes)
  • 4 tsp cardamom powder (or cinnamon)
  • 1 tsp baking soda
  • 1.5 tsp baking powder
  • 1/3 cup dark chocolate chunks
  • 1/3 cup chopped nuts of choice

Method
 

  1. Preheat oven to 350F (175C).
  2. Mash bananas, then mix in coconut oil, maple syrup, vanilla, and eggs.
  3. Combine oat flour, cardamom, baking soda, and baking powder in a bowl.
  4. Add dry ingredients to wet, mix until just combined, then fold in chocolate and nuts.
  5. Pour batter into greased loaf pan, bake for 45-50 minutes, cool before slicing.

Notes

Use ripe bananas for best flavor and sweetness.
