Ingredients
  

dry ingredients
  • 1 cup instant oats
  • 0.75 cup whole wheat flour or gluten-free flour
  • 1.5 tsp baking powder
  • 1.5 tsp ground cinnamon
  • 0.125 tsp salt
wet ingredients
  • 2 tbsp coconut oil or unsalted butter, melted
  • 1 large egg egg, room temperature
  • 1 tsp vanilla extract
  • 0.5 cup agave see Notes!
fruit and flavor
  • 1 cup finely diced red apple about 1 medium

Method
 

  1. Mix dry ingredients in a bowl. In another, whisk wet ingredients and stir in agave. Combine with dry, fold in apple, then chill for 30 minutes.
  2. Preheat oven to 325°F (160°C) and line baking sheet with parchment or silicone mat.
  3. Drop 15 scoops of dough onto sheet, flatten slightly, and bake for 11-14 minutes. Cool for 10 minutes before transferring to wire rack.

Notes

Chilling the dough helps prevent spreading during baking.
