Ingredients
  

Protein
  • 1 lb boneless, skinless chicken breast cut into 1.5-inch cubes
  • 1 red bell pepper red bell pepper cut into 1.5-inch pieces
  • 1 green bell pepper green bell pepper cut into 1.5-inch pieces
  • 1 medium zucchini zucchini sliced into thick rounds
  • 1 red onion red onion cut into 1.5-inch chunks
Seasonings & Oil
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • to taste Salt and pepper Salt and pepper
Skewers
  • as needed Skewers (wooden or metal)

Method
 

  1. Thread chicken and vegetables onto skewers, alternating for color.
  2. Preheat grill to medium-high heat.
  3. Mix olive oil, garlic powder, oregano, thyme, salt, and pepper; marinate skewers for 15 minutes.
  4. Grill skewers 5-7 minutes per side until cooked through and slightly charred.
  5. Remove from grill, let cool slightly, then serve.

Notes

Soak wooden skewers in water for 30 minutes to prevent burning.
