Method
- Preheat Oven to 160-170ºC. Prepare baking tray.
- Melt chocolate and butter over simmering water. Stir in vanilla.
- Whip eggs and sugars until light and fluffy (5 mins).
- Sift dry ingredients and add chocolate chips.
- Fold melted chocolate into whipped eggs gently.
- Fold dry ingredients into wet mixture until just combined.
- Bake for 12-14 minutes until set and crackly.
- Cool on tray for 10 mins, then transfer to cooling rack.
Notes
Adjust baking time based on your oven. Demerara sugar adds a nice caramel flavor.
