Method
- Preheat oven to 160ºC (320ºF) fan/170ºC (338ºF) conventional. Line baking tray.
- Melt chocolate and butter over simmering water. Stir in vanilla.
- Whip eggs and sugars until light, thick, and fluffy (5 mins).
- Sift flour, cocoa, baking powder, and salt. Add chocolate chips.
- Fold melted chocolate into whipped eggs gently.
- Fold dry ingredients into wet mixture until just combined.
- Scoop batter onto tray. Bake for 12-14 minutes until set and crackly.
- Cool on tray for 10 mins, then transfer to cooling rack.
Notes
Using demerara sugar adds a nice crunch to the brookies.
