Ingredients
  

Meat and Poultry
  • 1 lb uncooked chicken or turkey breast, ground
  • 3 large bone-in and skin-on chicken thighs
  • 2 large chicken breasts, cubed
Vegetables
  • 1/4 cup green onions, finely chopped
  • 1/2 cup yellow onion, chopped
  • 1/2 cup red sweet pepper, finely chopped
  • 2 cups broccoli florets
  • 2 medium sweet potatoes, cubed
  • 1 cup onion, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup green bell pepper, chopped
Grains and Rice
  • 1 1/2 cups brown rice, cooked
  • 1 1/2 cups white rice, uncooked
  • 1 1/4 cups long-grain white rice, uncooked
Broth and Soups
  • 2 1/2 cups reduced-sodium chicken broth
  • 2 cups low-sodium chicken broth
  • 2 10.5 oz cans cream of mushroom soup
  • 1 10.5 oz can cream of chicken soup
  • 2 cups chicken stock
Dairy and Cheese
  • 1 cup heavy cream
  • 1 cup Cheddar cheese, grated
  • 1 1/2 cup Parmesan cheese, grated
  • 1/4 cup sour cream
Other
  • 1 Tbsp honey
  • 2 tsp canola oil
  • 2 tsp sesame oil
  • 2 Tbsp rice grape juice vinegar
  • 3 Tbsp reduced-sodium soy sauce
  • 8 cloves garlic, minced
  • 1/4 cup panko breadcrumbs
  • 1 11 oz bag Doritos nacho cheese
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds

Method
 

  1. Cook chicken and prepare meatballs with garlic, ginger, and seasonings.
  2. Simmer meatballs in broth with vegetables and rice, then stir in basil.
  3. Prepare chicken casserole with rice, broth, mushroom soup, and baked chicken thighs.
  4. Make chicken and rice skillet with broccoli, cheese, and breadcrumbs, then broil until crispy.
  5. Assemble layered casserole with shredded chicken, tomato mixture, crushed Doritos, and cheese, then bake.
  6. Prepare Cajun chicken and rice bake with sausage, vegetables, and cheese, then bake until cooked.

Use fresh herbs for best flavor and consider freezing leftovers for quick meals.
