Sweet Potatoes
  • 2 large sweet potatoes
  • 4 tablespoons unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 2 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder

Method
 

  1. Preheat oven to 350°F (175°C) and grease a soufflé dish.
  2. Boil peeled and chopped sweet potatoes until tender, then mash in a bowl.
  3. Mix in butter, brown sugar, milk, egg yolks, vanilla, spices, salt, and baking powder until smooth.
  4. Beat egg whites until stiff peaks form, then fold into the sweet potato mixture gently.
  5. Pour into dish, smooth top, and bake for 25-30 minutes until puffed and golden.
