Method
- Preheat oven to 350°F (175°C).
- Mix pumpkin and eggs in a bowl.
- Stir in oat flour until smooth.
- Scoop batter into greased mini muffin tin, ¾ full.
- Bake for 18–20 minutes; cool before serving.
