Method
- Clean rhubarb and cut into small chunks.
- Grease and line a cake tin.
- Preheat oven to 180C(Fan)/350F/Gas Mark 4.
- Whisk together flour, sugar, baking powder, and baking soda.
- Whisk together soya milk, apple cider vinegar, vanilla extract, and oil.
- Pour liquid into dry ingredients and mix gently.
- Pour batter into tin, spread rhubarb, and sprinkle with cinnamon.
- Bake for 45-50 minutes, or until a toothpick comes out clean.
- Let cool and sprinkle with icing sugar.
- Serve and enjoy!
Notes
Adjust the amount of cinnamon to your liking for a spicier cake.
