Easy Rhubarb Cake (Vegan)

Ingredients
  

Cake
  • 240 g plain (all-purpose) flour
  • 220 g caster (fine) sugar
  • 125 ml rapeseed/sunflower/light olive oil
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 Tbsp cinnamon or to taste
  • 300-500 g rhubarb cleaned and sliced into small chunks
  • 200 ml soya milk
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • icing sugar to serve and to taste

Method
 

  1. Clean rhubarb and cut into small chunks.
  2. Grease and line a cake tin.
  3. Preheat oven to 180C(Fan)/350F/Gas Mark 4.
  4. Whisk together flour, sugar, baking powder, and baking soda.
  5. Whisk together soya milk, apple cider vinegar, vanilla extract, and oil.
  6. Pour liquid into dry ingredients and mix gently.
  7. Pour batter into tin, spread rhubarb, and sprinkle with cinnamon.
  8. Bake for 45-50 minutes, or until a toothpick comes out clean.
  9. Let cool and sprinkle with icing sugar.
  10. Serve and enjoy!

Notes

Adjust the amount of cinnamon to your liking for a spicier cake.
