Method
- Combine sugar, corn syrup, evaporated milk, and salt in a saucepan. Stir until sugar dissolves.
- Bring to a rolling boil over medium heat, stirring frequently. Boil and stir constantly for 3 minutes.
- Remove from heat. Stir in butter and vanilla until butter is melted.
- Add coconut and pecans. Fold in until evenly distributed.
- Drop spoonfuls onto lined baking sheets.
- Let set for 30-60 minutes, or refrigerate for 15-20 minutes. Store in an airtight container.
Notes
For a richer flavor, toast the coconut and pecans before adding them to the mixture.
