Ingredients
  

Rice and Chicken Mixture
  • 1 cup cooked rice
  • 1 cup cooked chicken, shredded
  • 1 cup mixed vegetables (frozen or fresh)
  • 1/2 cup chicken broth
  • 1/2 cup shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 tablespoon olive oil

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté vegetables for 3-5 minutes until tender.
  3. Add chicken, garlic powder, onion powder, salt, and pepper; cook 2 minutes.
  4. Mix in rice and chicken broth; heat for 3 minutes.
  5. Remove from heat, stir in cheese until melted, cool, then portion and freeze.

Notes

Label containers with date and contents for easy reheating.
