Ingredients
  

Dairy-Free Butter
  • 5 tablespoons softened butter (dairy-free like earth's balance)
Sugar
  • 1/2 cup plus 2 tablespoons organic sugar (or any cane sugar)
Egg
  • 1 egg egg (at room temperature)
Flavoring
  • 1/2 teaspoon vanilla essence (or almond extract for a different flavor)
Flour
  • 1 1/2 cups gluten-free 1:1 baking flour
Salt
  • 1/4 teaspoon salt (skip if using salted dairy-free butter)
Baking Soda
  • 1/4 teaspoon baking soda

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream together butter and sugar until smooth.
  3. Add egg and vanilla, mix well.
  4. In a separate bowl, combine flour, salt, and baking soda. Gradually add to wet ingredients.
  5. Drop spoonfuls onto baking sheet and bake for 10 minutes.

Notes

Using gluten-free flour makes these cookies suitable for gluten sensitivities.
