Ingredients
  

Vegetables
  • 1/4 cup green onions, finely chopped
  • 1/2 cup yellow onion, chopped
  • 1/2 cup red sweet pepper, finely chopped
  • 1/2 cup fresh basil, roughly chopped
  • 1 cup uncooked white rice
  • 2 cups low-sodium chicken broth chicken broth
  • 1 lb uncooked chicken or turkey breast, ground ground chicken or turkey
  • 2 10.5 oz cans cream of mushroom soup cream of mushroom soup
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup Cheddar cheese, grated
  • 1/4 cup panko breadcrumbs
Seasonings & Oils
  • 1 Tbsp. grated ginger, grated
  • 2 tsp canola oil
  • 2 tsp sesame oil
  • 3 Tbsp. reduced-sodium soy sauce
  • 1 tsp red pepper flakes, crushed
  • 1 Tbsp. honey
Additional ingredients
  • 8 oz Cheddar cheese, grated
  • 1 medium onion, chopped
  • 2 medium sweet potatoes, cubed
  • 1 lb Brussels sprouts, trimmed and quartered Brussels sprouts
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 cup low-sodium chicken broth
  • 6 cups cooked wild rice
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds

Method
 

  1. Cook rice and prepare the chicken and vegetable mixture.
  2. Combine ingredients in a baking dish, top with cheese and breadcrumbs, then bake at 350°F for 40 minutes.
  3. Prepare the soup base with garlic, onion, broth, and seasonings, then add cooked rice and basil.
  4. Cook the chicken, vegetables, and rice in a skillet, then finish with cheese and breadcrumbs under broiler.
  5. Assemble the casserole with cooked ingredients, bake, and garnish with parsley before serving.

Notes

Use fresh herbs for best flavor and adjust seasoning to taste.
