Method
- Season chicken with salt, pepper, garlic powder, and onion powder. Let sit for 10 minutes.
- Sear chicken in olive oil in a skillet over medium-high heat for 5 minutes per side until golden brown.
- Reduce heat, add rhubarb and honey over chicken. Add lemon juice and stir gently.
- Cover and simmer for 15-20 minutes until chicken is cooked through (165°F).
- Remove from heat, garnish with fresh herbs, and serve warm.
Notes
For a richer flavor, consider adding a splash of balsamic vinegar during the simmering process.
