Ingredients
  

Dairy
  • 2 cups heavy cream
  • 1 cup whole milk
  • 4 oz dark chocolate, chopped
Dry Ingredients
  • 3/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
Eggs
  • 4 large egg yolks
Flavorings
  • 1 teaspoon vanilla extract
  • Pinch salt

Method
 

  1. Combine cream, milk, sugar, and cocoa; heat until warm and sugar dissolves.
  2. Add chopped chocolate; stir until melted. Whisk egg yolks separately.
  3. Temper eggs with warm mixture, then combine and cook until thickened. Stir in vanilla and salt.
  4. Strain the custard, chill for at least 4 hours.
  5. Churn in ice cream maker, then freeze until firm.

Notes

Ensure the custard is thoroughly chilled before churning for best results.
