  • 1 cup brown rice
  • 4 cups vegetable broth
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • for garnish Fresh parsley

Method
 

  1. Heat vegetable broth in a saucepan over low heat.
  2. Cook onion and garlic in olive oil until translucent, then add mushrooms and cook until tender.
  3. Add rice and toast for 2-3 minutes, then gradually add warm broth, stirring until absorbed before adding more.
  4. Cook for 40-50 minutes until rice is creamy and tender, then stir in heavy cream and Parmesan cheese.
  5. Season with salt and pepper, then serve garnished with parsley.
