Base ingredients
  • 1/2 cup unsweetened applesauce
  • 1/2 cup unsweetened almond butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 Tbsp coconut flour (22g)
  • 2 Tbsp ground flax
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon (optional)
  • 1/4 tsp salt
  • 1/4 cup dark chocolate chips, chopped

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix applesauce, almond butter, egg, and vanilla until smooth.
  3. Add coconut flour, flax, cinnamon, baking soda, and salt; mix well.
  4. Fold in chocolate chips and let sit for 5 minutes to thicken.
  5. Scoop batter onto baking sheet and bake for 10-11 minutes.
  6. Cool slightly before transferring to a wire rack.
