  • 2 cups Cooked and shredded chicken
  • 1 cup Sautéed onions
  • 1 cup Peppers
  • 1 cup Black beans
  • 1 cup Corn
  • 1 cup Enchilada sauce
  • 8 pieces Tortillas
  • 1 cup Cheese

Method
 

  1. Mix shredded chicken with sautéed onions, peppers, black beans, corn, and some enchilada sauce.
  2. Roll the mixture into tortillas and place seam-side down in a baking dish.
  3. Top with remaining enchilada sauce and cheese.
  4. Freeze before baking. When ready, thaw overnight and bake at 350°F for 30-35 minutes.

Notes

For a spicier flavor, add some chili powder or hot sauce to the filling.
