Method
- Mix shredded chicken with sautéed onions, peppers, black beans, corn, and some enchilada sauce.
- Roll the mixture into tortillas and place seam-side down in a baking dish.
- Top with remaining enchilada sauce and cheese.
- Freeze before baking. When ready, thaw overnight and bake at 350°F for 30-35 minutes.
Notes
For a spicier flavor, add some chili powder or hot sauce to the filling.
