Ingredients
  

Vegetables and Aromatics
  • 1/4 cup green onions, finely chopped
  • 1/2 cup yellow onion, chopped
  • 1/2 cup fresh basil, roughly chopped
  • 1/2 cup red sweet pepper, finely chopped
  • 8 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 medium sweet potatoes, cubed
  • 2 cups broccoli florets
Proteins
  • 1 lb pound uncooked chicken or turkey breast, ground
  • 3 large pieces bone-in and skin-on chicken thighs
  • 1 lb pound boneless skinless chicken breasts, cubed
Grains and Rice
  • 1 1/2 cups cooked brown rice
  • 2 cups uncooked white rice
Broth and Soups
  • 2 10.5 oz cans cans cream of mushroom soup
  • 2 10.5 oz cans cans cream of chicken soup
  • 2 10.5 oz cans cans low-sodium chicken broth
Dairy and Cheese
  • 1 1/2 cups Parmesan cheese, grated
  • 1/4 cup panko breadcrumbs
Other
  • 1 Tbsp honey
  • 1/2 cup pico de gallo
  • 1 medium onion, chopped
  • 1/2 green bell pepper chopped
  • 1/2 red bell pepper chopped
  • 2 andouille sausages cut into 1-inch pieces
  • 1 15 oz can can tomato sauce
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds

Method
 

  1. Cook rice and prepare the chicken and vegetable ingredients.
  2. Sauté aromatics, form and cook meatballs, then simmer in broth with garlic, ginger, soy, vinegar, and red pepper flakes.
  3. Mix cooked rice, basil, and meatballs into the broth, then serve.
  4. Preheat oven, assemble casserole with rice, chicken, vegetables, and soups, then bake until cooked and golden.
  5. Sauté chicken, vegetables, add rice, broth, cheese, and bake until tender and bubbly. Garnish with parsley.
  6. Prepare the chicken mixture, crush chips, assemble layers, bake, and serve with pico de gallo.

Notes

Use fresh herbs for best flavor and adjust seasoning to taste.
