  • 1.5 cups whole wheat flour or oat flour for a softer texture
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
Wet ingredients
  • 0.5 cup unsweetened applesauce for natural sweetness and moisture
  • 0.25 cup melted coconut oil or unsalted butter
  • 0.33 cup Greek yogurt makes the cake soft and tender
  • 1 teaspoon pure vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease pans and line with parchment.
  2. Mix dry ingredients in a bowl. Combine wet ingredients in another bowl.
  3. Pour wet into dry, stir gently until combined. Fold in berries.
  4. Divide batter into pans and bake for 25-30 minutes. Cool in pans 10 minutes, then transfer to wire rack.

Notes

Use ripe bananas for better sweetness and flavor.
