Ingredients
  

Meat
  • 1 lb ground beef
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 2 eggs eggs
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil, sauté onions and garlic until softened.
  3. Add bell peppers and cook for 3-4 minutes.
  4. Combine all ingredients, form into patties or spread in a baking dish.
  5. Cook patties 5-7 mins per side or bake for 25-30 mins until internal temp reaches 160°F (71°C).
  6. Let rest briefly before serving.

Notes

For extra flavor, add your favorite herbs or spices.
