  • 1 lb chicken breast diced
  • 2 cups low-fat shredded cheese
  • 1 cup cooked brown rice
  • 1 cup salsa verde
  • 1 cup diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste salt and pepper

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix cooked chicken, rice, salsa, tomatoes, cumin, chili powder, salt, and pepper.
  3. Transfer mixture to a baking dish and top with shredded cheese.
  4. Bake for 30-40 minutes until bubbly and cheese is melted.
  5. Serve hot and enjoy!
