Ingredients
  

Dry ingredients
  • 2 cups Bob's Red Mill 1:1 Gluten-Free Flour or all-purpose or cake flour
  • 1 1/2 teaspoons baking powder preferably aluminum free
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon ground cinnamon preferably Saigon cinnamon
  • 1/8 teaspoon ground nutmeg
Wet ingredients
  • 2 large eggs farm fresh eggs
  • 3/4 cup maple syrup can substitute with 1 cup white sugar
  • 1/4 cup wildflower honey
  • 3 medium ripe bananas mashed
  • 1/2 cup canola oil
Frosting
  • 8 ounces cream cheese room temperature, 1 block
  • 2 tablespoons maple syrup regular
  • 1 teaspoon pure vanilla extract organic preferred
  • 1/4 cup India Tree Nature's Colors Carnival Sprinkles or amount to taste

Method
 

  1. Preheat oven to 350°F (175°C). Grease pans, add parchment, and prepare batter.
  2. Mix dry ingredients in a large bowl. Puree bananas and combine with eggs, sugar, and oil. Add to dry ingredients and mix.
  3. Divide batter into pans and bake for 22-27 minutes. Cool completely before frosting.
  4. Mix cream cheese, vanilla, and maple syrup until smooth. Spread frosting between layers and over the cake. Decorate with sprinkles.
